Recipe for Chicken Shawarma:

Ingredients:

For the marinade:

  • 2 lbs (about 1 kg) boneless, skinless chicken thighs, cut into thin strips
  • 1/4 cup plain yogurt
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste

For assembling:

  • Pita bread or flatbread
  • Sliced tomatoes
  • Sliced cucumbers
  • Sliced red onions
  • Chopped lettuce
  • Tahini sauce or garlic sauce

Instructions:

  1. In a bowl, mix together all the marinade ingredients: yogurt, olive oil, minced garlic, cumin, paprika, turmeric, cinnamon, cayenne pepper, salt, and black pepper.
  2. Add the chicken strips to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 1-2 hours, or ideally overnight. This will allow the flavors to meld and the chicken to become tender.
  3. When ready to cook, preheat your grill or stovetop grill pan over medium-high heat.
  4. Thread the marinated chicken strips onto skewers, allowing any excess marinade to drip off.
  5. Grill the chicken skewers for about 5-7 minutes on each side, or until they are cooked through and have nice grill marks. Cooking times may vary, so keep an eye on them to prevent overcooking.
  6. While the chicken is grilling, you can warm your pita bread or flatbread by wrapping them in foil and placing them in the oven for a few minutes.
  7. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes before removing it from the skewers.
  8. To assemble the shawarma wraps, place a piece of warm pita bread on a clean surface. Layer the sliced tomatoes, cucumbers, red onions, and chopped lettuce onto the bread.
  9. Add the grilled chicken on top of the veggies.
  10. Drizzle tahini sauce or garlic sauce over the chicken. You can also add other condiments like hot sauce or hummus if you like.
  11. Roll up the pita bread, folding in the sides as you go, to form a wrap.
  12. Serve your delicious Chicken Shawarma wraps immediately and enjoy!
