Tamales are a traditional Mexican dish made with masa (corn dough) that is filled with various fillings, wrapped in corn husks, and steamed until cooked. Here's a simple recipe:

Basic Tamales Recipe

Ingredients:

  • 2 cups masa harina (corn masa mix)
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup vegetable oil or lard
  • 1 1/2 cups chicken or vegetable broth (warm)
  • Corn husks, soaked in warm water to soften
  • Filling of your choice (e.g., shredded cooked meat, cheese, beans, vegetables, etc.)

Instructions:

1. Prepare the Filling:
- If you're using meat, cook and shred it beforehand. You can use beef, chicken, pork, or any other protein you prefer. Season the meat to your liking.
- Prepare any other fillings you plan to use, such as cheese, beans, or vegetables.
2. Prepare the Masa:
- In a large bowl, combine the masa harina, baking powder, and salt.
- Add the vegetable oil or lard and mix it into the dry ingredients until well incorporated.
- Gradually add the warm chicken or vegetable broth while mixing. Mix until the dough is smooth and has a slightly sticky consistency.
3. Assemble the Tamales:
- Take a softened corn husk and spread a spoonful of the prepared masa onto the center of the husk.
- Add a spoonful of your chosen filling on top of the masa.
4. Fold and Steam:
- Fold the sides of the corn husk over the masa and filling, then fold up the bottom to enclose the tamale. You can tie them with thin strips of corn husk if needed.
- Repeat the process until all the masa and filling are used up.
5. Steam the Tamales:
- Place the tamales upright in a steamer with the open end facing up. If you don't have a steamer, you can use a large pot with a steamer basket.
- Steam the tamales for about 1 to 1.5 hours, or until the masa is cooked through and firm. Check the water level periodically and add more hot water if needed.
6. Serve:
- Let the tamales cool slightly before serving.
- Unwrap the corn husks before eating.
7. Optional Toppings:
- Serve tamales with your favorite toppings, such as salsa, sour cream, chopped cilantro, or crumbled cheese.
